My personal favorite in science is Quantum Theory.
I thought I understood the meaning of cause and effect, but after digging my head into this field of science, I had to re-evaluate my thoughts. That is the best thing in science. You let go of absolute certainty and embrace new ideas, new ways of thinking.
Scientists discover new things everyday, and they have to modify theories to adapt to the new evidence. There seems to be no end in the search for knowledge, and this is probably the main reason why so many people find it interesting.
