Avacado Salsa

Ingredients:
4 medium avocados
1 pkg (16) oz Frozen corn thawed
2 can (2 1/4 oz) sliced black olives drained
1 medium sweet red pepper (chopped)
1 small onion (chopped)
5 garlic cloves minced
1/3 c olive oil
1/4 c lemon juice
3 TBL spoon of cider vinegar
1/2 teasp salt & pepper
1 teasp oregano

Directions: large bowl combine corn, olives, red pepper & onions. In a small bowl combine garlic, oil, lemon juice, vinegar, oregano & salt & pepper mix well. Pour over corn mixture and toss to coat. Cover and refridgerate overnight. Just before serving chop avocados and stir into salsa. Serve with tortilla chips.

Helpful hint: If going to a party chop avocados put in baggie and toss in when arrive at party. * also cutting avocados peel and then you cut in half around seed and then just pull from seed.
